Sadler’s Green Chile Corn Casserole

1 15.5 oz can whole kernel corn, drained
1 14.75 oz can cream-style corn
2 eggs
1 cup sour cream
1/2 stick of butter, melted
2 teaspoons cumin
1 4 oz can chopped roasted green chiles
Garlic, salt and pepper (to taste)
2 cups shredded cheddar cheese (divided)


Preheat oven to 350° F.

In a large bowl, add and blend all ingredients, except for 1/2 cup of the cheddar cheese.

Pour into a greased casserole dish, and bake for 45 minutes or until golden brown.

Remove from oven and top with remaining cheddar. Return to oven for approx. 5-10 mins. or until cheese is melted.

Allow to cool slightly and serve.
